Blair Ault Milam & Greene

Is Blair Ault the Greatest Whiskey Librarian in Texas?

BLAIR AULT

When Blair Ault isn’t running the beverage program at Milam & Greene Whiskey, you might find her at Grown-Up Story Time getting actors to perform stories submitted by writers. Or you might find her out scouting spaces for The Texas Whiskey Library, a project she’s uniquely qualified for as she not only maintains the whiskey library at Milam & Greene, she also has an advanced degree in library science. If (when) such a library is established, it will be the first of its kind in the U.S. and similar to legendary institutions like Bertie’s Bar you may find in Scotland.

What are you reading?

Because I definitely have ADHD—I’m very open about that—it is my third time trying to read this book. Which I find hilarious. Even though I only started it a couple of days ago, I’m halfway through the book and I think I’m going to finish it. I’m very excited.

I love this book by Emma Janzen. It’s the Whiskey Distilled for Mezcal.

What’s your fight song?

I love this song for it’s “fuck it energy”.

Worst thing you can say to a bartender

“I don’t care, give me anything.”

What’s your guilty pleasure drink

It’s an espresso martini—and I’m so mad at myself.

I never want to make another . . .

Lemon drop.

Unconventional bar tool you can’t live without

Actual teaspoons.

What’s the name of your drink?

Elderflower Sour

How the hell did you come up with this drink?

I was tasked with making a whiskey drink that fits the summer and I realized our triple cask is a very present bourbon. It’s not one you can sort of slip into any cocktail. That’s not how triple cask works. It has its own personality. So I thought “What is triple cask in the sunshine?” It actually pairs well with floral notes—which not all whiskies do. This drink is refreshing and delicious and I love it.
